THE BEST KIND OF AUTUMN DAY.
I'm sure you know by now that autumn is my favourite time of year and every year I try and savour the season as much as possible. This year I'd been trying to come up with some great autumn content for this blog and honestly I was feeling a little bit uninspired when last weekend I had the perfect autumnal weekend full of my favourite kinds of things and I thought why not just write about it and make it a post about how I like to spend a weekend in October & hopefully it might inspire some of you to make your own perfect kind of autumn day happen!
So the day started with maybe the most autumnal type of breakfast I could find on Pinterest– apple cinnamon pancakes! Making pancakes for breakfast always seems like such a cosy thing to do especially in the autumn time and especially when you're still in PJs and you put on episodes of Stranger Things while you tuck into your stack of pancakes. I'll link the recipe I based mine on here & also include it below in case you're interested in making some for yourself;
I N G R E D I E N T S
Apple Cinnamon Pancakes;
185g plain flour
2 teaspoons baking powder
2 tablespoons brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon nutmeg
1/2 teaspoon salt
1 large egg
240 ml apple juice
2 tablespoons butter, melted
Apple Cinnamon Topping;
4 large apples (roughly), peeled and cored
1 teaspoon lemon juice
180 ml apple juice
50 grams brown sugar
1/2 teaspoon ground cinnamon
R E C I P E
In a large mixing bowl, whisk together flour, baking powder, brown sugar, cinnamon, nutmeg, and salt. Make a well in the center and add the egg, apple juice & melted butter. Stir together until combined.
Pour a large spoonful (depending how big/small you want your pancakes) of batter onto a heated pan and cook each side until lightly browned. Serve hot with apple cinnamon topping (below).
Cut the apples into slices and cut those slices in half. Put the apples in a saucepan and add the lemon juice and apple juice. Stir apples to coat thoroughly with the mixture. Cover the apples and cook over medium heat for 7 minutes.
Add brown sugar. Turn heat down to medium-low and cook uncovered until the juice thickens and the apples are tender, about 10 minutes. Stir in cinnamon.
To serve, spoon apple cinnamon on top of pancakes. Drizzle with warm maple syrup. Enjoy!
After a cosy morning in with pancakes and Stranger Things me and Daisy (@florencemayvintage) headed out to one of our favourite places– the local pumpkin patch! The one that we visit is the Undley Pumpkin Patch in Suffolk and everything about it from the drive there through the forests to the pumpkin soup and maize maze is so autumnal and makes me so happy. We had a little wander around picking out the cutest pumpkins, completed the maize maize without getting lost this year and munched on cinnamon donuts while looking at the craft stalls. Definitely one of my most favourite things to do!
After a really lovely afternoon at the pumpkin patch it was time to head home and get cosy and after a hot bath (complete with pumpkin bubble bar from lush) I ended the day by lighting a candle, grabbing a coffee + my favourite blanket and reading some the first few chapters of my fave– The Night Circus by Erin Morgenstern.
